Jenny is a dear customer at Unique Wholefood, she puts her clever twist on traditional Greek Gemista - all the authentic flavours in a fraction of the time!
Serves: 4-6
Prep time: 15 minutes
Cook time: 35-40 minutes
Ingredients:
• 500g beef mince
• 2 tablespoons olive oil
• 1 large brown onion
• 1 medium zucchini
• 1 red capsicum
• ½ bunch fresh mint, finely chopped
• ¼ bunch fresh parsley, finely chopped
• 2 tablespoons fresh dill, chopped
• 500ml tomato passata
• 2 cups basmati rice, cooked
• 2 vegetable stock cubes
• Salt and pepper to taste
Method:
1. Roughly chop the onion and red capsicum, then pulse in a food processor until finely chopped
2. Grate the zucchini using a large-hole grater
3. Heat olive oil in a large deep pan over medium-high heat
4. Add beef mince, breaking it up with a wooden spoon. Cook for 8-10 minutes until well browned and liquid has evaporated
5. Add the processed onion and capsicum mixture. Cook for 5 minutes until softened
6. Stir in grated zucchini and crumbled stock cubes, cook for 5 minutes
7. Add all fresh herbs, cook for 2-3 minutes until fragrant
8. Pour in passata, reduce heat to medium-low and simmer for 15-20 minutes until sauce thickens
9. Fold through the cooked rice until well combined and heated through
10. Season to taste with salt and pepper
Serve hot, garnished with extra fresh herbs if desired. Perfect for family dinners!
